Sorry if I'm a little late to the party, but I'm a gluten-allergic vegetarian as well.

On the day to day, I eat a lot of staples, like fruit, vegetables, oats, beans, rice, etc., but there are a ton of options if you're an adventurous cook. Vegetable stews are a great option, because you can spice them whatever way you want and freeze them forever. I get a ton of vegan and flourless stew (or chilli) recipes online, and sometimes I'll make it more hearty by throwing in a cup of dry quinoa or rice. It's pretty simple, once you get into the habit of making them regularly.

Whenever I go out, I usually get Indian (curry is gluten free, just no naan), Chinese (rice and vegetables), Thai (noodles at good Thai restaurants are wheat-free), Ethiopian (the bread is made of teff flour), or Middle Eastern (any decent falafel is going to be wheat free). Your saving grace will be the fact that it's pretty trendy to eat gluten free, so most on-trend restaurants are going to have gluten free options. Even some chain restaurants are jumping on the bandwagon.

So, going without meat and wheat takes a little finesse, but it's easy once you get the hang of it.
