It's just raw fish. Worse it has a snooty clique of elitists that think of you use ingredients outside of some approved list, or follow a preparation method that isn't the traditional method, it isn't Japanese and therefore sub par.

And then they increase the prices for 'proper' sushi compared to the common stuff. I can't think of any other cultural cuisine that gets this snooty
