Just made this guy's Smothered Chicken
>fry some bacon, render fat
>remove bacon, caramelize onions
>sautee mushrooms (Morels, Boletes, Button)
>remove veg & most of fat
>add 4 chicken quarters, about 3/4 cup of stella artois & 1/3 cup of butter; salt, pepper, paprika, garlic, dried marjoram, a few shakes of cayenne
>cook on stovetop
>remove chicken when done
>add about a tblsp of flour, cook
>deglaze w/ milk
>add fresh parsley, a little rosemary
>reintro chicken and pop in oven
>serve w/ steak fries & carrots+corn
>eat a little and throw most away because I'm not a friend, not wholesome and have no wife
