Anon, I don’t know, the longest I left alone my sourdough starter was for one and a half month and it was still good. I wouldn’t use as old starter as you are describing. It’s not gonna be active anymore.

Well, if you want to have a really good, airy crumb, you want to use higher hydration dough. Also don’t forget to knead the dough properly to develop the gluten. It takes time to master but it’s well worth it.

I bake my own bread so I don’t need one.
