this summer, i want to grow mountains of zucchini. more zucchini that i know what to do with.

if you lightly salt them and let the water content drain, they firm up and become really meaty. use in lieu of pasta.

i bet they'd be even better completely dehydrated. let them reconstitute in the sauce.
