That's not mincing, it's crushing into paste;2 very different things--but we know what you meant.
I use mine on occasion to make flavored salts, like with celery seed or other aromatics.
crushing pepper is a classic, but with the stronger herbs, remember to clean it well, or those oils will go rancid over time.
If you have trouble removing smells from it, just wash it, dry it, and fill it with baking soda for a day or 2.

Any of them will do--they really are all the same.
Just be sure if you get one that isn't stainless steel, you "season" with dry white rice for at least a week.
This primes the work surfaces and insure you can clean it well.
To season:
Wash mortar and pestle thouroughly in warm spoopy water.
Let air dry in the sun for at least 24 hours.(on the equinox is best)
Add 1 cm of #1 jasmine or other medium grain rice to mortar and grind into a fine white powder, utilizing ALL working surfaces.
DO NOT RESIST
Gently shake powdered rice out without wiping, blowing or otherwise disturbing the fine powders on the mortar and pestle.
Save powder in a sandwich bag, closed with a loose overhand knot.
Let powder age for the remaining week--This creates a natural "penumbra" on the "skin" allowing any ground spices to not only amalgamate with the "Spirit" of the MaP, but also brings good luck.
Drive through an "economically disadvantaged" area of town, and gently relinquish the luck in the powder, by dropping it in a place where it will get the most exposure to the community--Gas station bays are probably best for this, as they see the most traffic, and will disperse the luck to largest amount of people who need it.
Be sure to place it somewhere that it won't be run over if you do.
Enjoy some quality self-abuse the first day you plan on using it--this just ADDS to the luck!
Use MaP in the normal way--consider, of course, that using wolfbane or wormwood necessitates a full re-cleaning and honing--(best done during the 7 days of the full moon::.3wax-full-3wane)
Trust me, all this extra effort for fresh ground pepper, star anus, and cardamom is WORTH IT!! Those guys who just run it through a coffee grinder for half a minut are missing out.
