I think It may have a slightly higher quality standard, but it's mostly brand name. I buy the dollar-twentyfive tree shit and it tastes great to me.
I really only use it on salads, but it's just as good as the Braggs shit for 1/7th of the price.

No. It's great on a salad.
I'm sure you could toss it in with a pasta, and most of the best potato salad recipies I've used call for splashing vinegar on the just drained, hot potato chunks before dressing.
If you COOK with it, you may lose some of the nutrients, but I wouldn't worry about it.
Most white vinegars these days are synthetically grown in a vat anyway, since it's cheaper to make acetic acid then dilute it down to 5%.
It doesn't have to be expensive either. I get mine at the dollar tree.

I thought pickled implied vinegar.
...or at least a lacto-bacter culture to create it's own vinegar.
Do you count sauerkraut as a pickle?

I'll do ya one better:
sprinkle the just out of the boiling water, drained potato with the vinegar of your choice just enough to partially wet all of them, but not soak them.
you'll be surprised just how much better it is.
Celery seed is also a common addition, but make sure it's fresh, old celery seed can taste "Doggy". It's good to bruise them with a spoon in a bowl(or a real mortar and pestle,) as well to release the oils.
