From my experience local restaurants are ran by greedy owners who refuse to pay a competitive wage, don't give a fuck about health and safety, and expect their staff to bend over backwards for them. Menu can range from frozen shit to actual decent scratch cooking and usually a mix of both. There is potential to learn actual culinary skills in these spots. The managers/chefs are typically less qualified for the position than the people they manage. The kitchen crew can be rag-tag but still tight knit.

Corporate spots can be decent but ONLY if you're a corporate location and not owned by a franchisee. Franchisees basically operate like a local spots, and too often I've seen some dickhead open a bar & grill chain just because he wants a spot for his buddies to drink. If you're corporate the pay will be better, hours and workload are more fair. The menu is almost always frozen, pre packaged, portioned out, etc. No freedom to learn. The management is similar to local spots being unqualified, but you may have corporate folks drop by who tend to know what they're doing and give a fuck. Kitchens can be more clean than others but largely depends on the eyes of management. The kitchen crew in these spots is largely exploited foreign workers and sponsorship programs.

Fine dining is a real slog through insane hours and high expectations. The pay can be good if you work for a big hotel or renowned local spot. If you manage to work your way to sous or higher they will basically force you into salary making the extra hours not worth it anymore. Management is decent but their expectations of your performance is all they care about. You can excel your culinary ability if you put your head down and take notes and work hard. Fine dining restaurants are very clean as the whole crew is around to do breakdown and deep clean. Crews are basically 2nd family as you spend nearly every waking hour in the kitchen.

Mortar and pestle. I recommend shopping in person before you settle on a size/Material so you pick one that better suits your cooking style. I also recommend it be aesthetic enough to double as a serving bowl for something. I usually use it dips like queso, guacamole, pico de gallo, spinach artichoke, hummus etc. I've also used it to serve olives, celery and carrot sticks to go with a wing platter. Well, if you're into entertaining I suppose. I miss parties guys... it's so alone here.
