I eat meat once or twice a week but the rest of the time I eat mostly vegetables. There isn't a whole lot of vegetarian options at restaurants here, the one dedicated vegetarian restaurant here is very high priced for what they serve, also they are kind of annoying to deal with.
Pic is bbq jackfruit, I need to work on it. I want to make it better, it wasn't that great but has potential

I have been cooking more vegetable centered foods. This "bbq" jackfruit, succotash, sweet potato w gravy, and cornbread plate was so cozy.
