based poster. I never tried a dab of oyster sauce and always just went ham with dark soy trying to match the take out color. A little sprinkle of baking soda on the chicken helps loosen the protein but it can go too far and make the protein so soft it goes slimy and mushy. Baking soda is not only a protip. but an art of getting the time and amount dialed.
