The cheese got blacked. Ash.

Now it stays in 85% humidity and 50-65F curing chamber. A magical mold will cover the cheese. After 1 week the temp is dropped to 40f and the humidity is increased to 90-95% where it will rest for another 2 weeks to 2 months.
