Tom Yum Goong. Simmer shrimp stock with lemongrass, garlic, galangal or ginger, thai peppers, mushrooms and lime leaves for 10 minutes. Add equal parts fish sauce, lime juice and peeled shrimp and simmer for 2-3 minutes.

So simple yet really complex flavors.

A deceptively simple "exotic" soup that will impress is Tom Yum Goong, a hot and sour Thai soup. Full of complex flavors, but really easy. My pic is missing the Thai basil, but it still came out damn good.

I' m making this tonight. Peiled deveined shrimp (shells used to make broth), lemongrass, galangal, garlic, thai peppers sliced, mushrooms, and fish sauce lime juice mixture. I'll simmer the vegetables for 15 minutes in the shrimp broth and add the fish sauce/lime juice and shrimp and simmer for 3 minutes then put in bowl with fresh chopped cilantro.

I'll show pics of the finished product if there's interest. I'm cooking brown rice now.
