3 hours, 2 people, and a single bird plucker. I was able to remove feet, head, guts, and clean in less than 2 minutes towards the end of it all.

Cornish cross are a lot faster than old hens because all the connective tissue is much weaker.

I have a commercial fridge that fit them all, so we were able to dry age the birds for a few days. Very tasty.
