So I'm a bleed heart who is trying to reduce his meat intake for environmental reasons, plus I'm a poorfag so less meat helps my budget. Can someone give me some advice on good big batch vegetarian foot to make?

Right now I got chickpea curry and bean chili sitting in my fridge. Thinking of what I should make next. Fried rice is a staple, but I'm hoping for something that feels more like real food.
