At least as far as I'm concerned it is because those dishes are easy to screw up. If you half-ass them they don't turn out nearly as well. That's why I have issues with eating lasagna most places, anyway. Chewy-burnt-ass noodles, gross-ass powder "cheese," dry, over-cooked meat, and tomato sauce filled with so much damn sugar it'll kill a diabetic.
