I think its just the look of them in general.
I'm sure if you boiled a cicada or a roach and it turned all red and delicious like a crab, people would be nomming them up like OP gobbles cock.

...though I wonder if roaches would even be safe to eat anymore, with as many generations that we've killed with insecticides. They're probably filled with poison, or taste like shit.

I'd wager that apples aren't the only produce that are going through this.
They're being modified to ship better.
Tougher + smaller = higher profits

The trick is to make the changes a bit at a time, so the masses don't notice.
They'll just keep saying "Oh it must've just been a bad season... oh maby its just nostalgia...
Instead of saying "Oh fuck someones trying to sell me a shittier, smaller thing for the same price as before!"
