Roquefort or stilton and port sauce is the best option for steak.

Sour cream and tomato salsa are buff as fuck for Mexican food, they go with just about everything (especially sopes and fajitas).

Nando's Per-Peri sauce goes with a ridiculous amount of bland food to make it taste incredible, as does Heinz jalepeno hot sauce (has a much better taste than regular hot sauce).

Lea & Perrins (Worchestershire) sauce goes with a lot of bland-ish dishes, but especially anything with cheddar or beef dishes without tomatoes.
