The same way stainless steel has different grades and purifies to determine whether it is food safe (see pic related) applies to all other materials potentially used for food production or storage including metal, glass, plastic, ceramic or as in this example stone. To qualify as "food safe" the manufacturer is required to follow specific guidelines concerning purity levels, material composition, manufacturing process etc. to ensure the end product can in fact be used in food production. Materials that are not classified as "food grade" on the other hand DO NOT have to abide by these strict regulations, and therefore do not since the aforementioned safe guards and higher quality materials can raise their costs.
