Roast them in the oven, use them in stew, pickle them. They are delicious and very earthy.
Protip; you can boil them with the skin on and them just slip it right off afterwards. Very handy.

Protip, by the way; you can boil them with the skin on and just pull it off afterwards with great ease. Much less of a hassle than peeling them. Slips off like skinning a blanched almond.

Pickled beets
Boil them whole until tender. After that you can rub the skin off with great ease
