Do you follow expiration dates on food products?

I'm asking because my family seems to always buy a fuckton of cheese and other stuff that just gets spoilt because nobody eats enough white bread (or bread at all). I throw away anything that has mold on it (and I'm forced to do that rather systematically), but "few days past expiry date, has never been opened" is always a dilemma for me
