my gf panic bought a bunch of non-perishable food at the beginning of covid and I'm trying to find a way to use it. In particular, she bought a giant box of instant mashed potatoes.

Is there any reason I can't use them to make stuff like gnocchi or German potato dumplings? Can I just mill it in with the flour? I don't see any reason that wouldn't work

pic related, gnocchi. It cooks way faster than pasta but when you pour it into the water it causes the hot water to splash back all over you
