I'm surprised no one posted this yet. It's intestines and offal of cow, lamb or anything. It's popular in Turkey, never seen it anywhere else.

Also in my hometown we eat balls and eyes of the cow and make salad with its brain.

One more thing is we also eat the organ of duck where they store rocks for mechanical digestion since they don't have teeth. It's a super lean meat, so when cooked with grease from head and feet of the duck it tastes really nice.
