I'm not seriously considering it, but it'd be fun to open an okonomiyaki place in the US.

I'd rather do traditional style, but I think in order to survive it'd probably have to focus on fusion with traditional options for purists.

I'm puzzled that hibachi is fairly common in the US, but okonomiyaki isn't.

If I were more ambitious I'd move to Osaka, learn the trade, and open up a place.

But I'm very much not ambitious. And I like Shizuoka way more than Osaka.
