>rinse and scrub the residual dirt off with your fingers and pat dry with paper towels
>poke holes all the way through both sides with a fork
>cover them in olive oil and a generous sprinkle of coarse salt
>in the oven 400F for 40 minutes
That's seriously all you have to do. You can cut them down the middle and add whatever seasonings or toppings you like. The skin is crispy and delicious and full of basically every nutrient you need to live.
