Out of curiosity what's your decision tree look like when you decide whether to use "Jiro charges $300" vs "cheat day from veganism" vs "tipping" vs "15 minutes from closing time"?

Is it just random or do you account for time of day, day of the week, etc?

If your favorite autentico osteria or obscure hole in the wall warung has started accepting credit cards, or a printed menu, it is time to find another place that serves proper food. If your favorite cha chaan teng starts offering napkins (especially if they do not charge you for them), leave immediately.

Some of the lower ranked coffees don't lose as much flavor after sitting on the shelf for a few weeks because they are not as delicate.

God tier beans like Costa Rican need to be drank within like 3, max 4 days of roasting, after which there's a very rapid decline in flavor

Nah, he just does a lot of stuff that's different and is really disciplined. iirc his son just buys one tuna at the fish market and its got the fat content that old school sushi people would use while the trendy sushi places use fattier stuff for the sweetness.

He also apparently uses a specific kind of rice that his rice dealer only sells to him. In the movie he also admits that his guys in the back room do like 80% of the work, but its his methods that they do it with.

Its been a while since I've watched the movie, I may be making this up.
