It's pretty ironic that you began by talking about rewriting history when you're literally just pulling shit out of your ass. Yes, many things that were once hipster later go on to become mainstream (which is why most people have difficulty identifying what is actually hipster), but IPA is not one of those things. By your own logic, IPAs are not hipster because they've become mainstream. But if they became mainstream because of hipsters, and everyone was "just pretending to like them", then how come they're just as popular as ever? Hipsters made PBR massively popular, but then it stopped being cool and guess what? People stopped buying it.

Hipsters still drink lagers, just like they always did. It may not be PBR anymore, but it's still tallboys of cheap lager.
