i nailed it.
on a med-dark (more medium than dark) roast:
-med-fine grind
-12g
-55ml of water at 99c
-press for ~3 seconds and let off
-1min preinfusion
-smooth, consistent press and only ramping up when needed

before there were varying levels of underextraction, but using the above has produced the best cup. i tried the same method at 14g but it always underextracted, which was weird. i may try coarser grind on the larger dose.

much better! the coarser i went, the better extraction i got. the crema mostly dissipates after stirring.
