What you need to do is just add water until a ball starts to form and it is still tacky but not too sticky for you to knead. The flour's absorption of water can change based on how fresh the flour is and different types of flour such as bread or all purpose flour. If you make a habit of just adding water until a tacky ball forms it will be easy to make pizza without having to remember ratios and recipes.
