Lamb shanks. I hold them by the bone, which is already classless as fuck, but then I also pull the different bones apart so I can get to all that delicious, I don't know what the fuck to call it except natural bone glue, I suck the marrow out of the end, and I strip away as much tendon as I possibly can.I use the thin end of the little bone as a scoop inside the bigger bone to get the marrow I missed.

There is no way to do this shit in public and not look like an animal. That's why I make them at home.
