You have to get them at the right place and the right time. Unless you live in Louisiana or any of those southern states, the majority of the crawfish you see in grocery stores or buffets are imported garbage from China and are usually cooked in bland and/or chinese seasonings.

If you want to experience real honest to god superior crawfish, then visit New Orleans or any of those southern states around March or April when they are in full season. The spices and the preparation are far FAR superior to anything you're going to find at some Diarrhea Dragon buffet.

You peel them and eat them exactly how you would eat a lobster. They're almost identical, in that sense. If cooked properly, they should be tender and sweet and spicy.

I encourage you to not judge ALL crawfish from just one experience. You've had shitty shrimp in the past, right? It's the same concept. Those shitty shrimp do not represent all shrimp and some places make better than others. Same too for crawfish.
