I like to make meringues when I have extra whites, but I like that so much that now I make them anyway and have to find a use for yolks. "Tocino de cielo" (taslates to heaven's bacon)m is incredible. It's basically flan made with just egg yolks, sugar, and water.

INGREDIENTS:
Mold 24 x 10 cm
Tocino:
12 eggs yolks M
1 egg M
330 g sugar
220 ml water
Caramel:
100 g sugar
3 tbsp water
1 tbsp lemon juice
