How do I not fuck up aglio e olio?

I know this is one of the things you shouldn't be able to fuck up but recipes are never as exactly specific as is necessary. When the garlic starts browning do I just TURN OFF the heat or do I REMOVE it from the heat? How much lemon juice do I really need? etc..

Made it for my parents, I liked it, but I fucked up. Forgot the chili flakes so I tried using powder, and I think flakes would be much better.

Also my parents wanted some meat in it so I added some salmon, and it worked out fine
