Most North American Chinese food is bastardized Cantonese crap that has been modified to suit Western tastes over so many decades that it barely qualifies as "Chinese" anymore.

Having lived in China for 2 years, I can use chopsticks better than anyone I know. That being said a knife and fork is a superiour eating instrument for everything except maybe sushi. Deal with it.
