Guys i i have tried making pad thai multiple times, but it mostly came out too sour for my taste. Beside using less tamarind paste, point is, lot of recipes add crushed dried shrimp, but i have none readily available on me or anywhere in my city right now, can i sub shrimp paste for it? Is tablespoon enough for replacing, let's say about 20g of dried shrimps? I assume paste should be quite fragrant and intense in taste.

Dried shrimp/prawn goes a long way. Chopped chinese sausage too. Quickly tossing them in the oil to flavor it before you start tossing in the rest of the ingredients brings out alot of flavor.
