I keep very little plastic shit in my kitchen at all, and none of it is for anything beyond room temp.

Make sure the stove is hot before you put the pot on, try heating the water chamber with hot tap water first too so it doesn't cool down the boiling water you pour in. Otherwise check your grind size; if it's sour then it's too it needs to be ground finer, if it's too burnt then it needs to be ground coarser (to clarify what >>16670859 said).

Grind should be between table salt and white sugar.

Or just try different beans, different roasts. Generally though darker is better for moka pot.
