hey /ck/ so i recently got a job at a country club serving to the people who come to the pool. i get my own prep and cooking area with griddle, stove + top and grill as well. id like to have a chefs special every 3 days and i want it to be simple but tasty recipes. my first one i was thinking of doing would be a polenta with glazed carrot, roasted tomato and whipped cream with cinnamon.
anyone have suggestions?

Breast > Drum > Wing > Thigh

Breasts are juiciest and the most filling, and are easiest to cook with. Thighs are hard to eat and have too much anatomy you have to work around.

ok co/ck/s ... so i recently bought a new house with tonnnnns of space. i'm considering frying a turkey for thanksgiving .. any helpful suggestions either for or against?

Here's what I do.

>saute onion, bell pepper, and celery in bigass pot
>add garlic, smoked paprika, cayenne pepper, salt, black pepper, thyme, cook until fragrant
>add 2 quarts water, 1lb soaked kidney beans, bay leaf
>cook that shit forever
>water should have reduced down, leaving you with delicious seasoned and tender beans and thick gravy
>put rice in bowl, then beans, then fried andouille, then a bunch of tabasco. minced scallions optional.
>put some zydeco on and crack open a beer. enjoy on your back porch while getting devoured by mosquitoes.

The only way you can fuck it up is by not adding enough salt or if the beans don't want to cook through, but that can be remedied by soaking the beans in salt water overnight. Experiment with shit, if you're not an idiot you don't need exact measurements. Try adding smoked ham hocks with the beans, or pickled pork. Some folks like to add the sausage in around the last 30 minutes or so of cooking and that's perfectly fine but real caw-cajun style is to put the fried sausage right on top in your bowl, grease and all.

CANNED BEANS ARE NOT AN OPTION

TABASCO IS MANDATORY
