In America, why is it mandatory to tip 20% and more at a restaurant?

I go visit America and visit a Buffalo Wild Wings. I order a hamburger and 6 wings. The service was alright, so I tip a standard 10%. Friends scold me for only tipping 10% and tell me that I need to at least tip 20% because servers only get paid like a dollar per hour. I say that a 10% tip is fine in my opinion and that it's the employers responsibility to pay a decent wage. I go to a steak house and order ribs, friends scold me for only having tipped 20% when the service was "exceptional".
