could you batch and then portion into vac bags and freeze immediately? you've got the ol' idea mill spinning in my head for a scallop dish but i don't want to waste my time clarifying the aguachile just to toss it after two days

>freeze into daily portions
>thaw daily

or simply add the lime juice with the oil as needed with the clear base

>scallop crudo, sliced horizontally in half with the top dusted with some toasted bonito flake that's buzzed to a coarse powder with toasted nigella seeds so the top part is sitting above the aguachile
>a few nice dots of avocado/creme fraiche puree
>candied jalapeno slices (pour boiling simple syrup over paper thin mandoline slices of jalapeno, tweezer onto silpat, oven at 250 for 5-10 minutes, flip, another 5 minutes til crispy)
>garnish with oregano and cilantro

monochromatic, bright, tasty, texturally interesting

i'll get a dozen, and i'll shuck six of them. i'll eat a control freshie and a pre-shucked one every hour for six hours. i'll keep them in a pan on ice with plastic wrap to keep the fridge taste off of them.
