Saffron and lobster, especially with risotto, is a classic pairing, how do you miss that

Also you really can't shortcut risotto so I'm glad he actually did it the traditional way at the end. I worked the risotto station for a year at a Venetian small plates restaurant, and the menu straight up says "please allow 30 minutes" in the risotto section.
