Not sure why mac and cheese brings the snobs and autists out of the woodwork. A roux or citrate-based Mac and cheese with quality pasta, a blend of strong cheeses, and some wine or beer for additional complexity can be an absolutely delicious dish worthy of 'adultness', whatever the fuck that's supposed to mean. Make that cheese sauce out of starchy pasta water and pecorino romano, or melt it in a pot with wine for dipping bread into and suddenly you're eating a 'sophisticated' dish for adults. Absolutely arbitrary bullshit.
