So I started making Eric Ripert's beef bourguignon. It has me marinating a pot of beef chuck, red wine, stew vegetables and bouquet garni "overnight."

I put it in the fridge at around 8:00 (6 hours ago) and I just checked on it. The beef is getting mushy, and I'm scared that if I leave it in till tomorrow evening (I was going to put the stew on at 5 pm or so) it's going to be complete mush.

Will the alcohol destroy the meat? If so, what can I do to save my dish?
