Always put at least some kind of alcohol in your meal, like deglazing your pans with it, as soon as I started doing this all the fucking time my cooking improved immensely. I'm aware most people know about this, but it's usually red/white wine only, but port wine is great too. If a recipe calls for red wine at least use a little bit of port, gives much more depth and a pleasant sweetness. Also use brandys like cognac, in your desserts of course, but also in normal cooking, especially to deglaze roasted meat bits. Experiment with other types maybe, I noticed it's really hard to go wrong, but I also only use alcohol I would drink neat too.

Also I have this from some other anon, if your cooking tastes bland (no depth) it's lacking either salt or acidity, most people put on the salt but quickly forget that a dash of vinegar (I often use a tarragon infused one) or lemon juice can really make a dish.
