I'm just asking for advice on cooking such a small portion of brisket.
If you think it's just a case of "cook a smaller portion, nothing will change", then you understand nothing about cooking.
Surface to volume ratio will be changed dramatically.
It will probably take far less time to get the interior up to proper temperature, but this is a potential problem, because of the high percentage of connective tissue in brisket, which normally takes a long period of time to break down.
How the fuck do you not understand this?
