What are some interesting technical foods to make? Stuff that takes more than throwing it in a pan or a crockpot. Stuff like cabbage rolls and souffle.

Any classically trained chefs on here? I'm interested in autodidactically trying to learn some basic culinary techniques, NOT interested in going to culinary school though. Do you know of any resources that teach the theoretics of say the first year of culinary school? I'm mainly interested in something that covers the basics in a comprehensive and structured manner, like textbooks or something like that

I will share my delicious Aloha sauce recipe, which I found somewhere online years ago.
Combine 1 tsp ground ginger, 1 tsp paprika, 1 Tbsp garlic salt, and 3 Tbsp cider vinegar; marinate meat(8 pork chops are original- chicken is good too) for about 20 minutes.*
Next combine 1 cup ketchup, 1/4 cup soy sauce, 1/4 cup brown sugar, and a 20 oz can of pineapple chunks with juice. Place meat in 9" x 13"baking dish and pour sauce over; bake at 350F for 1 - 1 1/2 hours, until meat is cooked through. Awesome with rice to soak up the extra tasty sauce.
*Note: Marinade originally called for 2 Tbsp garlic salt and 1 Tbsp onion powder but I found it too strong for me- ymmv. Fresh is probably great too but this is a slap together dish for me so haven't tried it that way.
