Native Chicagoan here, Chicago thin has a specific ruleset.
>must be thin and crispy
>cheese must be mozzarella
>sausage needs to be under the mozzarella
>pepperoni on top of the mozzarella (pepperoni is optional but sausage is necessary)
>tavern cut (aka grid cut)
Giardiniera is optional but necessary for natives, so if you're a tourist wanting to look like a local, add giardiniera on everything.
