Tipping was brought back to America by wealthy travelers around the time of the civil war. at first it was seen as inegalitarian and unamerican, but in the post war era many businesses couldn't, wouldn't, or didn't want to pay black laborers who flooded the market after emancipation. As tipping was something you did to an Inferior and America had previously lacked a class system, this introduction of a large amount of outright 'inferiors' people now had to engage with provided the social and economic impetus to adopt tipping as a common practice for porters, waiters, laborers, etc.

Tipping in America is literally a way for people to feel superior and/or good about themselves, which is why there is now so much pushback against changing it even when the context has changed. That and restaurants not wanting to pay workers, and for a while never had to though now that they can't find anyone post coof the bitching is hilarious. Ironically tipping in Europe phased out due to the various revolutions and labor movements

Unrelated note, I know from an academic standpoint that is the proper color and texture of a properly cooked med. rare steak, but having grown up with boomers who cooked the shit out of everything I still cannot avoid a visceral nagging thought in the back of my mind: that's too raw. Like, I know, no it's OK the meat doesn't have to have a ring of brown, but my brain screeches NO IT'S RAW

Would... wouldn't making my own food stuffs preserve more food stuffs for other people to buy? Like... I'm not buying bread because I make my own... someone else can buy that bread... do you think people be out there just making bread then pissing all over it and burning it in a trashcan?
