Woks are really good for deep frying. the shape of the wok helps keep all the oil splatter in the wok. Also, you can get a strainer that clips to the side of the wok to drain the oil of the the just fried pieces back into the wok.

BTW - any reason you have two pans going at once? Are you double frying at different temperatures?
