Needs? No. But a pan sauce, or caramelized onions, or whatever is nice. I buy beef a quarter steer at a time, so I have the luxury of breaking up the monotony and fucking around.
One of the more interesting ones is steak-stuffed steak. Take a medallion, cut three holes amidships, and fill with ketchup, mustard, and mayo. Sear hard and fast. Then put it in a blender. Then take a second medallion, cut and stuff the blended steak. Sear mediumish temp and eat.
Also it's bullshit that you can't make a good well-done steak. Just butterfly it and constantly baste it in butter on medium.
