Buy this:

5 lb bag of potatoes
1 lb bag of rice
1 lb bag of beans
1 whole head of lettuce
1 whole head of spinach
1 large loaf of bread (french, or any other)
1 dozen eggs
1 gallon of milk
1 block of your favorite cheese
a bunch of youryour favorite seasonal fruits

Cook around all of that and there you go you've gone vegetarian. After that reintroduce meat. Rice is great for this as you flavor the rice with meat instead of centering the dish around it. Recipes from Asia, India, and the Middle East all use a ton of rice around a few pieces of meat. Learn a bunch of vegan recipes too. It's a good way to learn how to cook without meat and it is super easy to re-add meat to many dishes. i.e., vegan chili can be a con carne with 1 ingredient.
