Wikipedia conflates different meanings of the word together because most people are ignorant of the practice, like you. What happened was southern barbecue was invented, very derived from other methods and recipes, and other people starting calling poor imitations "barbecue" because they didn't know about the real thing. That's why yankees call cookouts barbecue and aussies call braai barbie. There's nothing really wrong with adopting a word in this manner, but it doesn't mean that the original barbecue is suddenly some variation of an established idea. Instead, it means that this idea was simply succesful enough that the term was adopted to mean other things, eventually. Imagine if I was trying to argue with you that shishkebabs weren't a dish from the near-east because greek had gyros which some people call kebabs. That's how you sound.
